Ya know, I think I just realized why you have to specialize as you climb up the skill ladder. My grandfather was a master chef in his younger days. I'd say that arguably qualifies him as a 3@10 cook. However, he knows next to nothing about cooking with a crock pot. They don't use that very much in the restaurant business, after all. I just thought that was interesting now that I finally understand it.
Absolutely.
We had a guy staying with us who graduated from culinary school as a pastry chef. He could make just about anything, but it was when he "threw together" a cheesecake or something that he was at his best.
